CHAMOMILE LIQUEUR
INGREDIENTS:
Two bunches of fresh whole Chamomile Matricaria flowers,
one liter of ethyl alcohol 90 proof, 700 grams of water,
and 700 grams of sugar.
After crumbling the Chamomile flowers let them sit in the
alcohol for 40 days. Shake the container hard 2 or 3 times
each day. After the 40 days, prepare syrup with the water
and the sugar. Filter the alcohol through a screen and squeeze
it well to get all the essence of the vegetable residue
from the flowers. When the syrup has cooled add it to the
alcohol, mix and let it rest for one day. If it seems still
too filmy, filter it again before bottling.
This recipe is excellent for aiding digestion and combating
spasms.

MELISSA WATER
INGREDIENTS:
50 grams of Melissa flowers, 20 cloves, 10 grams of nutmeg,
10 grams of coriander, 10 grams of fresh lemon zest, a liter
of spirits.
Grind well all the dry ingredients in a mortar, and put
them in a hermetically sealed container with the alcoholic
spirits for two weeks. Shake the container everyday. After
two weeks squeeze the solid residue through a cloth and
let it rest one day. Then bottle it, filtering if necessary.
This is an excellent digestive, but it can also be taken
for dizziness.

ROSE LIQUEUR "ROSOLIO"
INGREDIENTS:
40 grams of fresh rose petals, 1.4 liters of 90 proof alcohol,
1.6 kilograms of sugar, 1.2 liters of water.
In a mortar, pound and grind the rose petals with 100 grams
of sugar until it becomes a paste. Let it sit in the alcohol
for 10 days. With the remaining water and sugar make warm
syrup. Let it cool and then add the rose paste. Mix, seal
and let is sit for 10 more days. Then filter, bottle and
seal.
